Objective To study the determination of protein in bleeding sap from Xinjiang grapevine and its antioxidant activities .Methods The protein level of bleeding sap from Xinjiang grapevine was measured by Coomassie brilliant blue method ;its free radical scavenging abilities were investigated by ABTS meth-od ,hydroxyl radical kit method ,DPPH method and nitrite method with ascorbic acid as a positive control . Results Because of different origins and varieties ,there was significant difference in protein content of bleeding sap from grapevine ,and Hotan Munage′s was the highest ,which was 22 .4 ± 0 .07μg/mL ;its an-tioxidant activities also differed ,and scavenging capacity to · OH was significantly higher than to DPPH · and NO -2 · .Conclusion Xinjiang grapevine bleeding sap possesses different protein level and antioxidant activities ,due to its origins and varieties .%目的:了解新疆葡萄树伤流液蛋白含量及其抗氧化能力。方法采用考马斯亮蓝法测定新疆葡萄树伤流液的蛋白含量;以抗坏血酸为阳性对照,应用ABTS法、羟自由基试剂盒法、DPPH法和亚硝酸盐法,研究其对自由基的清除能力。结果不同产地、品种的葡萄树伤流液蛋白含量不同,其中和田木纳格最高,为22.4±0.07μg/mL ;不同产地、品种的葡萄树伤流液清除自由基的能力不同,但对· OH的清除能力明显高于对DPPH ·和NO -2·的清除能力。结论新疆葡萄树伤流液因产地和品种的不同,其蛋白含量及清除自由基能力也不同。
