作者通过扫描电子显微镜和化学、仪器分析对松花蛋中“松花”的结构作了系统分析。结果表明,松花蛋的松花大多生长在蛋白质凝胶的浅表层,其次是凝胶的底层,而分布在蛋白质凝胶中间的松花几乎没有。松花晶体基本上都是纯净的单个的非金属纤维结晶。晶体主要由Mg2+构成,镁离子占松花晶体的40.3%,其它离子的含量极少。晶体的红外光谱与氢氧化镁晶体的红外光谱完全一致。灼烧3个小时后晶体与氢氧化镁水化物的失重相吻合。可以认定松花晶体的化学构成是较为纯净的氢氧化镁水化物。%The structure of “SOOGHUA” is analyzed by scanning electron microscopiec,chemical method and instrument analysis.As a result,SOOGHUA grows on surface layer and bottom of albumen-gel;The SOOGHUA crystal is a nonmetal fibre crystal;The crystal make up of Mg2+ mostly,magnesium ion accoun for 40% of SOOGHUA;The nifrared actino spectrum of the crystal is consistent with magnesium hydroxide fully;The weightlessness of the crystal agrees with magnesium hydroxide hydrate fully.It is recognized that SOOGHUA crystal is formed by magnesium hydroxide hydrate.
