Fat - 1 gene comes from C. elegans . Its translation product is aw - 3 polyunsaturated fatty acids desat-urase, the function of which is to use 18-20 carbon w - 6 PUFAs as substrate for dehydrogenation, generating the corresponding w -3 PUFAs, to balance the ratio w -6/ w -3 PUFAs in vivo, and it has an important role in the prevention and treatment of cardiovascular, cancer, schizophrenia and other diseases.
