微波法提取枣皮中红色素及其稳定性研究

     

摘要

通过微波技术提取枣皮中的红色素,综合单因素实验和正交试验,探究微波提取枣皮中红色素的最优反应条件,即微波功率200W,NaOH浓度0.20mol/L,萃取时间60s,料液比1:20(g/mL).在酸性环境中枣皮红色素遭到破坏而易产生沉淀;在碱性的溶液中可增加其稳定性,从而呈现出枣红色,同时发现Zn2+、Mg2+、Ca2+也对红色素具有增色效果.该方法具有萃取率高,时间短,绿色环保等优势,为工业化生产红色素奠定了良好的实验基础.%Microwave method is used to extract red pigment from jujube peel. By single factor experi-ment and orthogonal test,we find the best factors of microwave method to extract red pigment from ju-jube peel:microwave power(200W),CNaOH(0. 20mol/L),extraction time(60s),solid to liquid ra-tio(1:20,g/mL). Red Pigment from jujube peel is unstable in an acidic environment,and is easy to produce precipitation. When it is in an alkaline environment,its stability will increase. Pigment solu-tion is purplish red,Zn2+、Mg2+、Ca2+ can enhance the color of red pigment. This method is efficient, fast and environmental friendly. This experiment laid a good foundation for the industrial production.
