This paper is about the application of near infrared spectra analyzing technique in detecting fruit and vegetable. The principle of near infrared spectra is briefly introduced. The method of statistic analysis and the latest study circs of this area are described in the paper. The latest study of nondestructive interior quality inspection in fruit and vegetable were reviewed.
