[Objective] To analyze acorn powder properties and emulsion liquefaction conditions.[Method] The property,liquid concentration,pH of acorn powder were investigated,effects of emulsion liquefaction conditions on subsequent saccharification to produce glucose were studied.[Result] The optimal liquefaction conditions are:liquid concentration 32%,pH 5.8,under the above conditions,14.4% hydrolysis glucose could be obtained.[Conclusion] The study can provide reference basis for comprehensive utilization of acorn powder.%[目的]分析橡实粉的性质及其乳液的液化条件.[方法]对橡实粉的性质、壤实粉料液浓度、pH进行了考察,研究橡实粉乳液的液化条件及对后续糖化生成葡萄糖的影响.[结果]确定了橡实粉较优的液化条件:料液浓度为32%,pH为5.8,在此条件下可获得14.4%的水解葡萄糖.[结论]研究可为橡实粉的综合利用提供参考依据.
