以罗田板栗主栽品种中果早栗为试材,研究其不同采收期主要营养成分含量的变化.结果表明,随着板栗的成熟,其水分逐渐降低,而淀粉、蛋白质、可溶性糖、脂肪和维生素C都呈上升趋势,成熟Ⅰ期和成熟Ⅱ期的水分、可溶性糖、脂肪和维生素C含量差异不显著,淀粉和蛋白质含量差异显著;而未成熟中果早栗与成熟Ⅰ期和成熟Ⅱ期的中果早栗各营养成分均具有显著差异.充分成熟的板栗,果实代谢处于最低水平,具有较好的商业贮藏性能.为防止板栗充分成熟后栗苞开裂致使栗果落地造成损失,建议在成熟期Ⅰ时一次性打落进行采收.%The main nutrient ingredients of three different maturity of chestnut "Zhongguo zaoli" were analyzed- The results showed that when the chestnut was in its growing period, the moisture content decreased, and the content of starch, protein, soluble sugar, fat and vitamin C increased. There was no significant difference among the content of water, soluble sugar, fat and vitamin C in maturity Ⅰ and Ⅱ of Zhongguo zaoli while significant difference among the content of starch and protein in maturity Ⅰ and maturity Ⅱ of chestnut was observed. However, all the nutrient ingredients in maturity Ⅰ and Ⅱ of Zhongguo zaoli had significant difference. As a result, a better commodity and storing performance of chestnut was obtained in its maturity Ⅱ period, for it could accumulated more nutrients, and the metabolism was in the lowest level. The chestnut should be beating in maturity Ⅰ in order to prevent the lost from falling the maturated nut.
