Antigenotoxic activity against 4-nitroquinoline-1-oxide (4-NQO) of lactic acid bacteria was studied with high performance liquid chromatography(HPLC). Each strain was co-incubated with 4-NQO at 37℃for 4 hours. HPLC was used to determine the 4-NQO content of the co-incubation misture. The degenotoxic inhibition of 4-NQO was used to evaluate the degenotoxic activity of lactic acid bacteria. 55 strains from 6 species were determined. High genotoxicity inhibition (>75%) was found for 11/55 of the examined bacteria. Strains with high antigeno-toxicity (>75%) were evidenced in both Lactobacillus salivarius and Lactobacillus fermentium. The dose-effect relationship and miniml effect dose were different between species.%脱基因毒性功能是乳酸菌的重要功能之一。本研究通过检测菌体与致癌物4-NQO共培养后致癌物质的残留量对菌体的脱基因毒性功能强弱进行评价。结果表明:在选取的6个不同种属共计55株乳酸菌中,有11株乳酸菌具有较强的基因毒性脱除作用,脱除率大于75%。其中唾液乳杆菌9株,发酵乳杆菌2株。不同种类乳酸菌脱除基因毒性的剂量反应关系和最小作用剂量有很大区别。
