植物油基人造奶油研究进展

         

摘要

人造奶油是一种一种油包水(W/O)乳状液体,风味独特,口感细腻.植物油价格便宜,成分稳定,广泛用于人造奶油生产.目前对于植物油基人造奶油的总结尚少,本文综述植物油基人造奶油的研究现状、技术及工艺,为进一步发展植物油基人造奶油的生产与研究提供理论指导.%Margarine is a kind of water in oil (W/O) emulsion liquid, which has unique flavor and delicate taste. Vegetable oil has cheap and stable ingredients, which is widely used in margarine production. At present, there is little research on vegetable oil-based margarine. In this paper, the research status, technology and pro-cessing of vegetable oil-based margarine were reviewed, which provided an effective way for further develop-ment of vegetable oil-based margarine.
