蔬菜中11种重金属积累效应研究

         

摘要

The newly established methods for simultaneous determination of trace elements in vegetables by microwave digestion and inductively coupled plasma mass spectrometry (ICP-MS) were used to determine the contents of heavy metals (Sr, Cr, Ni, Cu, Zn, As, Mo, Cd, Pb, Se and Hg) in vegetables were studied. The enrichment rules of heavy metals in vegetables were also studied, including the enrichment rules of many elements(Se, Mo, Sr, Ni, etc.) in vegetables for the first time. The results showed that the selective absorption of heavy metals by vegetables showed as follows:Sr>Mo>Cd>Cu>Zn>Hg>Se>As>Pb>Ni>Cr. There were significant interspecific differences in the ability of vegetables to accumulate heavy metals, among which, leafy vegetables such as Chinese cabbage, spinach and celery had the strongest enrichment ability for all heavy metals, and the enrichment ability of cucumber and loofah was weak. The worst concentration of heavy metals was leeks, due to its short growth cycle.Grasp the absorption and distribution of vegetables on the law of heavy metals, vegetables and reasonable production layout, to develop green food and pollution-free vegetables provide a theoretical basis.%采用新建立的通过一次微波消解,电感耦合等离子体质谱同时测定蔬菜中多种元素含量的方法,对蔬菜生产基地的土壤与蔬菜中重金属(Sr、Cr、Ni、Cu、Zn、As、Mo、Cd、Pb、Se、Hg)的含量进行检测,并对蔬菜中重金属的富集规律进行研究,其中有多种元素(Se、Mo、Sr、Ni等)在蔬菜中的富集规律的研究尚属首次.结果表明:蔬菜对重金属的吸收选择性大致表现为Sr>Mo>Cd>Cu>Zn>Hg>Se>As>Pb>Ni>Cr.而蔬菜积累重金属元素的能力存在着显著的种间差异,其中以小白菜、空心菜、芹菜等叶菜类对各重金属的富集能力最强,黄瓜、丝瓜等瓜果类的富集能力较弱,韭菜由于其生长周期短,其对重金属富集能力最差.掌握蔬菜对重金属的吸收与分配规律,合理进行蔬菜的生产布局,对发展绿色食品和无公害蔬菜提供理论上的依据.
