The study developed a measurement for nutrition environment in fast food restaurants.The quality of nutrition environments were assessed in 20 fast food chains in Haidian district,including 10 brands and 42 set meals.It was found that western-style fast food chains provided various extra services and nutritional information for patrons,compared to Chinese-style ones.Chinese fast food restaurants which contain buns/noodles provided more healthy items,while they could improve in extra services to promote healthy eating habits.%利用研制的快餐店营养环境评价方案对海淀区内10个品牌、20家快餐店的42个套餐进行调查.结果显示:西式快餐的营养质量和烹调方法虽不如中式快餐,但可调整服务措施和营养信息较为丰富.日式盖饭及中式米饭类快餐的营养环境质量较为相似,中式面食类快餐的整体营养环境质量最高.
