研究1-MCP处理结合急速与缓慢两种降温方式对中华寿桃采后生理的影响.结果表明,1-MCP处理明显推迟中华寿桃果实呼吸和乙烯高峰出现的时间,降低其呼吸强度和乙烯释放量,较好地保持桃果硬度,减缓可溶性固形物和可滴定酸含量的下降,降低桃果的出汁率,从而延长桃果贮藏期,延缓品质劣变,以短期缓慢降温处理的效果更佳.%The effect of 1-MCP treatment combined with rapid or slow two different cooling methods on physiology of Zhonghuashoutao peach fruit after harvest was studied in this paper. The results showed that, 1-MCP treatment postponed the occurrence time of climatic respiration and ethylene, inhibited the respiration rate and eth-ylene production of peach fruit, maintain the firmness, delayed the decline the content of the soluble solids and titratable acidity, reduced the juice yield content, prolonged the storage time and delayed the deterioration of quality of Zhonghuashoutao peach fruit, and the effect of short slow cooling method was better.
