四川羊肉加工产业技术发展研究

         

摘要

养羊是支撑四川农业增效、农村发展、农民增收的特色产业之一,羊肉制品更是深受消费者喜爱的美味佳肴.近十余年四川省在羊肉加工领域进行了富有成效的技术研究和产业化开发,但技术水平低和加工规模小严重制约了产业的发展.为此应以市场为导向,在重点于优质羊肉生产的同时,通过技术进步和政策支持促进企业集群的形成,特别是通过技术的产业化转化应用,促进技术水平和规模的提升.在技术研发和产品开发上,一是传统特色羊肉制品的预调理标准优质化,二是现代技术和装备提升产品品质和安全性,三是屠宰副产物的高效环保和联产节能利用.%Sheep husbandry is one of the distinctive supporting industries in Sichuan province, which promotes agri-cultural production, rural development and farmers'income. Mutton products are delicious foods, which are deeply loved by consumers. In recent ten years, Low level of technology and small scale of processing seriously restricted the development of the mutton processing industry, although Sichuan province has carried on the fruitful technical researches and the industrialization development in the mutton processing field. Therefore, we should tahe the mar-het as the guide, focus on the production of high quality mutton and through technical progress and policy support to promote the formation of enterprise clusters. In particular, we should promote the level of upgrading and the scale of technology through the industrial transformation and application of technology. In technology research and product development, one is the preprocessed standard high-quality of traditional characteristics of mutton products, two is the use of modern technology and equipment to improve the quality and safety of product, three is the effi-cient utilization of the offal in meat processingindustry.
