云南烟叶感官甜度分类分析及代表样品建立

摘要

In order to guide the cigarette formula,raw material procurement,new product development,the sensory evaluation of 24 flue-cured tobacco samples in eight representative production areas of Yunnan were made,the sensory sweetness of Yunnan tobacco was classified,and the associated appearance representative samples of crude flue-cured tobacco were established.The results showed that the evaluators distinguished the differences of five types of representative samples based on the Friedman test under the significant level of 5％.Based on the page test,the evaluators identified the rank differences among the five sample categories which reached a stable consensus,so the sweetness of Yunnan flue-cured tobacco could be divided into five grades.The representative sweetness samples of Yunnan tobacco leaf were established by sequence analysis.%为了指导卷烟配方、原料采购、新产品开发,通过对云南8个代表性产区,24个烟叶样品进行感官评吸评价,探索云南烟叶的感官甜度分类,并建立相关联的原烟外观代表样品.结果表明:在5％的显著水平下,基于Friedman检验,评价员区分出了5类代表样品的差异性.基于Page检验,评价员辨别出了5类代表样品之间的排序差异,达到了稳定一致,说明可将云南烟叶甜度划分为5个档次,并通过排序分析,建立了云南烟叶甜度的代表样品.
