动车组列车快餐盒饭储运环节食品安全现况调查研究

         

摘要

目的了解某铁路局动车组列车快餐盒饭供应储运环节食品安全现况,为完善动车组餐饮供应食品安全监管提供依据。方法采用现场调查及试验研究的方法。结果食品安全状况整体较好,作为储运快餐盒饭主要设备的保温箱在放置适当冰排情况下冷链盒饭保持≤10℃可达48小时以上,热链盒饭保温≥60℃可达4小时以上,动车组餐车冷藏柜及保温柜保温效果良好,冷链盒饭时间-温度-微生物试验提示应低温冷链储运。结论储运环节食品安全基本符合要求。但也存在储运快餐盒饭断链,对冷、热链食品温度缺乏实时科学检测手段,缺乏动车组列车快餐盒饭储运环节食品安全技术规范,储运环节无人监管等问题。为减少安全隐患,建议供餐企业配置连续自动温度记录设备,提示监督部门应加强动车组列车食品生产经营全过程监管。%Objective In order to understand the food safety status in storage and transport of the food and beverage on trains of a railway bureau, and provide the basis for the improvement of food safety inspection. Methods Field investigation and experimental study was adopted.Results The food safety situationis good on the whole.As the main equipment in the storage and transport of fast-food lunch, incubators with appropriate ice floe cases can maintain cold chain lunch≤10℃for more than 48 hours,as the hot chain lunchcan maintain≥60℃up to more than 4 hours, the freezers and insulation cabinet of HSR diners has good insulation effect, the time- temperature- microbiological tests of cold chain lunch suggest that food should be stored and transportedunder cold chain. But also, thereareproblems such as the off-chain possibility of box-lunch when they were stored or transported, the lack of real-time and scientific detection means for the temperature of the food under cold orhotchain, the lack of food safety technical specifications of storage and transportation of fast food lunch on HSR, no supervision on storage and transportation and so on. Conclusion The storage and transportationof catering sup⁃plieson HSR can meetthe basic requirements on the whole, to reduce the potential safety risks, we suggest thatcatering en⁃terprises should adopt The Food Safety Standards of Storage and Transportation of Fast-food Lunch which was drew up this time, andbe equipped with continuous automatic temperature recording equipment.The inspection departments should strengthen the supervision of the whole process of food production and operation on high-speed trains.
