家禽宰前致晕(击晕)相关的动物福利的最新评价方法包括大脑状态(脑电图、脑电阻、脑皮层电图)、心脏状态(心电图、心室纤维颤动、心脏停搏)、视觉反射(视觉诱发电位)、行为反应(痛觉反射、呼吸运动、摆头、颈部张力、瘫倒、惊厥抽搐)、应激激素含量等.本文对家禽的致晕机理和动物福利评价方法进行综述,为研究家禽致晕相关的动物福利、制定动物福利标准、立法和监督提供参考.%The evaluation methods on animal welfare during the process of stunning includes the states of brain (electroencephalograph,brain impedance,electrocorticogram),heart condition (electrocardiogram,ventricular fibrillation,cardiac arrest),visual reflection (visual evoked potential),behavioral responses (pain reflex,respiratory rhythm,headshaking,neck tension,physical collapse,convulsions),stress hormones etc.We reviewed the mechanism of stunning methods,and the evaluation methods of poultry welfare in the process of pre-slaughter stunning,to provide reference for the research of animal welfare,welfare standards-setting,legislation and supervision for pre-slaughter stunning of poultry.
