可视化阵列传感器技术鉴别不同香型白酒

         

摘要

Components determined aromatic types in liquor are numerous and complex. Colorimetric array sensor was used for detecting five typical aromatic liquors in China. After preliminary identification with color change profiles, the digital data library generated was analyzed with statistical and chemometric methods, including hierarchical cluster analysis (HCA) and principal component analysis (PCA). Different aromatic liquors can be correctly classified by HCA. Though the first three principal components obtained by PCA only represent 75.8% of the amount of liquor information, the five typical aromatic liquors can be distinguished from each other. These results showed that colorimetric array sensor can be used for the identification of different aromatic liquors. It is a simple and efficient detection and identification method.%决定白酒香型的物质种类繁多,成分复杂.采用可视化阵列传感器技术对中国白酒五大香型的代表酒样进行检测,在可视化区分的基础上采用分层聚类分析、主成分分析等统计分析方法,对检测结果进行分析.不同香型的白酒在聚类分析中可以正确归类,利用主成分分析得到的前3个主成分所代表的白酒75.8%的信息量就可以将不同香型白酒完全区分开,表明可视化阵列传感器可以很好地用于白酒香型的鉴别.作为一种简单、高效的检测方法,可视化阵列传感器技术可在白酒的检测和鉴别中发挥更大的作用.
