低蛋白质日粮添加N-氨甲酰谷氨酸、维生素A对育肥猪肉品质的影响

         

摘要

试验旨在研究低蛋白质日粮添加N-氨甲酰谷氨酸(NCG)、维生素A、N-氨甲酰谷氨酸+维生素A对育肥猪生长性能、胴体品质、肌肉脂肪的影响。选取192头健康状态良好、平均体重(79.90±3.32)kg的三元杂交育肥猪,进行3批次动物试验。每批次试验中每个处理4个重复,每个重复6头育肥猪。试验结果表明:低蛋白质日粮中分别添加0.1%、0.2%N-氨甲酰谷氨酸,3000、6000 IU/kg 维生素A,0.1%N-氨甲酰谷氨酸+3000 IU/kg 维生素A对育肥猪生长性能、屠宰率无显著影响(P>0.05)。0.1%、0.2%N-氨甲酰谷氨酸试验组与对照组相比,育肥猪肌肉脂肪含量、大理石花纹评分、血清中精氨酸含量分别提高14.3%、15.9%,16.0%、17.7%,12.6%、20.4%,差异显著(P<0.05),第10肋背膘厚度、背最长肌滴水损失、血清尿素氮含量分别下降13.0%、11.5%,11.5%、14.6%,20.4%、16.7%,差异显著(P<0.05),而两试验组间各指标无显著差异。3000、6000 IU/kg 维生素A试验组与对照组相比,育肥猪第10肋背膘厚度、背最长肌中饱和脂肪酸含量分别下降11.9%、13.2%,4.1%、4.0%,差异显著(P<0.05),两试验组间各指标无显著差异。0.1%N-氨甲酰谷氨酸+3000 IU/kg 维生素A试验组与对照组相比,眼肌面积、大理石花纹评分、背最长肌中精氨酸含量、背最长肌中多不饱和脂肪酸含量分别提高6.1%、24.4%、12.5%、17.6%,差异显著(P<0.05),育肥猪第10肋背膘厚、背最长肌滴水损失分别下降10.2%、7.0%,差异显著(P<0.05)。%This study was conducted to investigate the effects of N-carbamylglutamate,vitamin A (VA),N-Car-bamylglutamate+VA on fattening pork quality under the conditon of low protein diet.A total of 192 fattening pigs (Duroc× Landrace×Large White)with an average body weight of(79.90±3.32) kg and good health condition were randomly assigned to 3 groups with 4 replicates of 6 each.The results showed that compared with control group ,0.1%,0.2% N-carbamylglu-tamate,3000 IU/kg,6000 IU/kg VA and 0.1% N-carbamylglutamate+3000 IU/kg VA experimental groups had no signifi-cant effects on fattening pigs growth and slaughter performance (P>0.05).Compared with control group,0.1%,0.2%N-carbamylglutamate adding level increased muscle fat,marbling score and arginine content in blood significantly (P <0.05),the rising ratio were 14.3 %,15.9%,16.0 %,17.7 %,12.6%,20.4% respectively.The tenth rib backfat thickness, drip loss of longissimus muscle,serum urea nitrogen content were decreased significantly (P < 0.05),the reduction ratio was 13%,11.5%,11.5%,14.6%,20.4%,16.7% respectively.There was no significant difference between the two treatment groups. Compared with control group,3000 IU/kg,6000 IU/kg VA adding level decreased tenth rib backfat thickness,fatty acid content significantly(P<0.05),the reduction ratio were 11.9%,13.2%,4.1%,4.0%respectively,there was no signifi-cant difference between the two treatment groups.Compared with control group,3000 IU/kg,6000 IU/kg VA adding level decreased tenth rib backfat thickness,fatty acid content significantly (P<0.05),the reduction ratio were 12.9%,4.1%re-spectively,there was no significant difference between the two treatment groups.Compared with control group,0.1%N-car-bamylglutamate+3000 IU/kg VA adding level increased eye muscle area,marbling score,arginine content in longissimus muscle,unsaturated fatty acid content in longissimus muscle significantly(P<0.05),the rising ratio respective were 6.1%, 24.4%,12.5%,17.6%.The tenth rib backfat thickness,drip loss of longissimus muscle decreased significantly(P<0.05),the reduction ratio were 10.2%,7%respectively.
