In order to understand the sale status and quality of vinegar on the market,the investigation and statistical analysis are made about the types and price of vinegar.According to the investigation, seventeen vinegars are chosen and their physicochemical indexes are tested.The results show that the vinegar with the price from RMB 4~8 Yuan and produced by big factories is popular with consumers. The quality of liquid fermented vinegar according to GB 18187 technology and high total acids is the best.Through the correlation analysis of vinegar price and electronic nose detection results,it is obtained that electronic nose could be used as the main factors influencing the price,the stronger the smell of vinegar,the higher the price of vinegar.%为了解市场上食醋的销售情况和品质,对郑州市各大超市、农贸市场进行市场调查,统计分析食醋的市场分布情况。根据市场调查结果,结合食醋的品牌、酿造工艺和总酸,共选择17种食醋进行测定分析。通过对电子鼻、色差仪等的测定结果进行统计分析,得出市场上最受消费者欢迎的食醋是价格在4~8元的老牌企业生产的食醋。而市场上品质最好的是GB 18187液态发酵、高浓度总酸的食醋。通过对食醋价格和电子鼻测定结果进行相关性分析,得出电子鼻的测定结果可以作为影响价格的主要因素,食醋气味越浓郁,价格越高。
