己酸菌培养条件和不同微生物对己酸菌生长代谢影响的研究

     

摘要

Review the morphological characteristics of caproic acid bacteria and different culture conditions,the effects of different microorganisms and caproic acid symbiotic fermentation on caproic acid bacteria number and its acid production.Identify the suitable growth conditions and ecological environment of caproic acid bacteria,which plays an important role in the cultivation of high-quality caproic acid bacteria and its generation of ethyl caproate.Under the conditions of temperature of 35 ℃,CaCO3 content of 15 g/L,ethanol concentration of 2%,pH of 4~6.5,the growth of caproic acid bacteria is the best.The suitable carbon source of hexanate is ethanol,which can effectively promote the growth and metabolism of hexanate bacteria by adding a proper amount of humus,water,Vc,and nitrogen substance.The actinomycetes provide the source of nitrogen and acetic acid to synthesize acetic acid.Therefore,it is reasonable to add exogenous substances and other microorganisms in the process of liquor brewing,so as to further improve the liquor quality and yield.%文章综述了己酸菌的形态特征和不同培养条件、不同微生物与已酸菌共栖发酵对己酸菌菌数及其产酸的影响,找出己酸菌适合的生长条件和生态环境,对培养优质的己酸菌及其对己酸乙酯的生成具有重要作用.在温度35℃,CaCO3含量15 g/L,乙醇浓度2%,pH 4~6.5条件下己酸菌生长最好;培养基中已酸菌适宜的碳源是乙醇,添加适量的腐殖质、底锅水、Vc、含氮物质可以有效促进己酸菌的生长代谢;放线菌为己酸菌提供氮源,乙酸菌生成乙酸供合成已酸.因此,白酒酿造过程中可以合理添加外源物质和其他微生物,以期更进一步提高酒质及出酒率.
