In this paper,quantitative descriptive analysis (QDA)method is adopted to do the sensory evaluation and establish QDA graphs of two kinds of apple jam.The sensory characteristics of apple jam are analyzed by t test.The results show that acidity and delicate sense of two kinds of apple jam have significant differences.Color,sweetness,apple aroma,coke paste aroma have no significant difference.The method is suitable for the sensory evaluation of apple jam.%应用定量描述分析法(QDA)对2种苹果酱进行了感官分析,建立了2种苹果酱的QDA图,并用t检验对苹果酱的感官特性进行了分析,结果表明:2种苹果酱的酸度和细腻感有显著差异,色泽、甜度、苹果香气、焦糊香气无显著差异,该法适合于苹果酱的感官评价.
