果蔬皮渣活性物质提取研究进展

     

摘要

重点概述了果蔬皮渣活性物质的提取技术.其中膳食纤维常用的提取方法有酶法、酸碱法、微生物发酵法以及辅助处理如超声辅助水提取法、微波辅助法、超声分散结合高压蒸煮法;果胶常用的提取方法有盐析法、酸解法、酶解法、微波法等;抗氧化物质包括多糖类、多酚类和黄酮类的常用提取方法有酶解法、超临界流体萃取法、离子沉淀法等.%The extraction of active substances in the peel residues of fruits and vegetables were introduced. The methods used for the extraction of dietary fi ber are enzymic method, acid-alkali method, microbiological fermentation method, and other auxiliary processes, such as ultrasound-assisted water extraction, microwave-assisted extraction, and ultrasonic dispersion combined with botulinum cook. The methods used for pectin extraction are salting-out method, acid-alkali method, enzymic method, microwave method. The methods used for the extraction of antioxidants (polysaccharides, polyphenols and fl avonoid) are enzymic method, lon precipitation method, supercritical fl uid extraction method and so on.
