蒲公英金银花复合保健饮料加工工艺研究

         

摘要

With dandelion and honeysuckle as raw materials,compound health beverage of hawthorn and pine needle is developed. By single factor test and orthogonal experiment design,the optimal formula of the beverage is that 30%dandelion extraction and 30% honeysuckle extraction,with 15% white granulated sugar and 0.08% citric acid. The composite stabilizer is 0.1% CMC-Na and 0.1% sodium alginate. The beverage is light brown,clear and transparent, uniform,and a fabulous combination of sour and sweet.%以蒲公英和金银花为原料,研制蒲公英金银花复合保健饮料。通过单因素实验和正交试验,得出饮料的最佳配方为蒲公英提取液30%,金银花提取液30%,白砂糖15%,柠檬酸0.08%。复配稳定剂为0.1%CMC-Na和0.1%海藻酸钠。所得饮料为浅棕黄色,澄清透明,均匀一致,酸甜可口。
