The changes in fruit physiology and quality of three melon varieties during storage were studied.The results indicated that there was great difference in the physiology and quality of post-harvest fruits among 3 melon varieties.In comparison with other 2 varieties,Hamilv melon showed better storability during the whole storage: the respiratory peak value of its fruits appeared latest (21 days after harvest);the decrease in its fruit hardness,water content,soluble sugar content,soluble solid content and vitamin C content was the slowest;the decay rate of its fruits was the lowest.Therefore,the fruits of Hamilv melon are suitable for long-time storage.%以3个不同品种甜瓜为试材,研究了其在不同贮藏期间各品种甜瓜果实生理和品质的变化情况,结果表明:不同的甜瓜品种对采后果实的生理与品质影响较大,与其他2个品种相比,哈密绿甜瓜在整个贮藏过程中表现出较好的耐贮性,果实的呼吸高峰值出现最晚,为21 d,果实硬度、含水量、可溶性糖、可溶性固形物和维生素C含量下降速度缓慢,腐烂率最低,适合较长时间贮藏.
