A modified atmosphere and modified humidity packaging system was developed to increase the shelf-life of fresh mushrooms (Agaricus bisporus) stored at 12;The rate of cap development of mushrooms was found to be retarded by lower O;Transpiration coefficients determined for fresh mushrooms increased with decreasing water vapor pressure difference between mushroom and the environment. Calcium chloride-treated mushrooms had a lower transpiration coefficient than normally-grown mushrooms. Vacuum cooled mushrooms had lower surface moisture content than conventionally cooled mushrooms during storage in MAP at reduced RH (85-88%).
