The meat, livers, kidneys and ribs of pigs from two different regions (chalk and basalt) in Mexico (Jalisco state) were examined for copper, chromium, manganese and zinc. Results for the element cadmium had been published already (6). he concentrations were measured using inductively coupled plasma optical emission spectroscopy (ICP-OES) methodology (4). The mean levels of manganese and copper were found to be in the range < 0.100-94.98 mg/kg dry mass (DM), regardless of the type of tissue. Chromium levels ranged from 350 to 4473 μg/kg, the high levels being in the ribs samples. The mean levels of zinc were between 91 - 207 mg/kg.
