The results of this study show that the controlled atmosphere accomplished by nitrogen-lime combinations can be effectively used for storing apples. There were fewer changes in chemical composition and firmness of fruits stored in a controlled atmosphere compared to those in a normal atmosphere. Loss of total sugar, total acids, L-ascorbic acid, and starch was smaller. Due to the fewer changes in chemical composition, fruits stored in controlled atmosphere had better taste, lighter color, and better juiciness. The best results among the varieties examined were obtained with Ajdared and Cacanska pozna under storage in the controlled atmosphere.
