In selenium (Se) deficient populations, Se-enriched food crops and food supplements are often recommended to overcome Se deficiency. Moreover, Se nano-and microparticles have recently been cited as potential ingredients of functional food or feed components. It is well-known that the effective bioavailability of Se in Se-enriched products may depend on the chemical form in which Se occurs, as well as the matrix within which Se is embedded in the different products (Lavu et al., 2014). The term "bioaccessibility" has been defined as the fraction of a compound that is released from its matrix in the gastrointestinal tract and thus becomes available for intestinal absorption. Bioaccessibility data for pure Se standards, a yoghurt-based food supplement containing elemental Se particles, a Se+vitACE supplement, and Se-enriched crops (leek and kenaf) were previously reported by Lavu et al. (2014). In the current study, we investigated the bioaccessibility of Se contained in chemically and microbiologically synthesized nano- and microparticles in vitro and compared it with the bioaccessibility of Se in SelenoPrecise tablets and two different types of selenized yeast.
