The rapid growth of aquaculture in Colombia as a supplier of protein for human consumption has led to the implementation of techniques in the production of safe food to meet the demands in nutritional quantity and quality with a minimum negative impact on the environment.For the experiment, 1323 male juvenile Nile tilapia Oreochromis niloticus, without hormonal reversal were used., The initial average weight was 162.0 ± 7.0 g in polyculture with Prochilodus magdalenae (detritivore species), Ramdhia queleen and Caquetaiaumbrifera (predators species), with a tilapia ratio of: 1 / 37, 1 / 73 and 1 / 49 respectively. The fishes were randomly allocated into 9 earth ponds (200m2 each one), with different levels of fertilization: two with organic manure and a control (SAI: Intensive fertilization system -5g/m2/day , SAP Periodic fertilization system -14g/m2 / week and SSA: No fertilization. . The fishes were grown and fed organic diet for 180 days, according to the guidelines proposed by NATURLAND (2011) for organic aquaculture. Organic diets were formulated under the concept of ideal protein, maintaining the balance between Gross Energy and Crude Protein (EB / PC) for the following phases: grower (27% CP and 4120 cal / g EB) and finisher (21% CP and 4200 cal / g EB), using local resources from certified organic farming. The effects of treatments on nutrient deposition in fillet were analyzed. These data were calculated based on the results of proximate composition and daily weight gain (DWG) obtained in this study.
