A Survey of Business Models in Japanese Restaurant and Retail Industries

摘要

This study explores the service models of Japanese restaurant and retail chains using publicly available data on companies. The sample includes 18 restaurants and 8 retail stores. The centralized kitchen in some of the restaurant chains reduces the time for cooking and preparing foods, which decreases the price of the foods and increases the quality of the services. Meanwhile, retail companies like AEON MALL Co., Ltd. and Fast Retailing Co., Ltd own the original supply chain used by their affiliated companies, which is then adapted to the companies' circumstances such as customer demands and economic cycles.
