The total arsenic concentration in selected high consumption food from Santa Fe, Argentina, was determined by Flow Injection Hydride Generation Atomic Absorption Spectrometry (FI-HGAAS) in-order to estimate their contribution to the daily dietary intake. A dry ashing procedure was used for the mineralization of the samples. An aqueous standard curve was used to the quantification of arsenic in all matrices. Limits of detection and quantification were 6 and 18 μg kg~(-1), respectively. The reliability of the method was demonstrated by recovery assays. The average recovery range at a fortification level of 200 μg kg~(-1) was 80-110%. From data, foods that more contributed to arsenic dietary intake were rice and wheat flour.
