Lipids are one of the most oxidizable food constituents.To avoid or delay the oxidative deterioration of food antioxidants are being used.There are many antioxidants on the market,but as the latest research showed natural sources are more and more appreciated by the consumers.One of naturally occurring antioxidants sources are commonly consumed fruits from different families,containing polyphenols,which became a major group of future antioxidants.
