摘要

As one of the largest developing country, China is in the high incidence season of food security issues at present. Considering the direct relation between civil health and catering service, the security of food hygiene is very important. This article analyzed the reason of the potential satety hazard of the dining eats oil from aspects of technology, economic benefits and system to reveal the systematic defect of edible oil security system, and recommend establishing a systematic mechanism for the safety of edible oil on the basis of applicable technology, maximum economic benefits, and practical system.
