Campylobacter jejuni is a leading cause of sporadic food-borne illness in humans with chicken meat implicated as a major source of infection [1]. C. jejuni colonises the lower gastrointestinal tract of chickens with approximately 70-90% of chickens becoming colonized by 4-7 weeks of age [2]. At slaughter, C. jejuni is spread from the gastrointestinal tract of chickens onto the surface of dressed carcasses. Risk modeling analyses have indicated that targeting Campylobacter in the gut of chickens is likely to have the greatest impact in reducing human infection by reducing the Campylobacter load on chicken meat [3].
