The geographical origin and production system of meat and dairy products are particularly important for those legally protected in UE with designation of origin (PDO) and geographical indications (PGI). The development of analytic tools that allow thequality control and authentication of these products are needed and are an important research topic. Some chemical markers and techniques are briefly reviewed. Particular emphasis is given to the potential of fatty acids as markers of production system.In addition, the utilization of plant secondary metabolites as markers of geographical origin and production system are discussed. The potential of stable isotopes ratios methods and some spectroscopic methods are also reviewed. The recent research produced interesting and promising results indicating effective discrimination of geographical origin and production system of foods may be achievable.
