摘要

The plant of the family Araceae is used as the principal food in Southeast Asia and Pacific Islands. Among these, arum root "Amorphophallus konjac", is widely used for fabricated food "konnyaku" in Japan. A. konjac is the unique plant which accumulates glycomannan in large quantities in corm. Glycomannan is composed of D-glucose and D-mannose in the molar ratio of 1 : 2. However, how and why is glycomannan produced and used in A. konjac?
