The use of bacterial Alpha Amylase enzyme that hydrolyses alpha bonds of alpha linked polysaccharides like starch has been applied in sugar factories out side India. The use of the enzyme in Indian sugar mills is not very popular. The hydrolysis products of starch are monosaccharides. Enzymes are macromolecules, usually a protein, they Junctions as a bio-catalyst by increasing the reaction rate. The starch is very important molecule for energy storage in nature, it is found naturally in sugarcane plant, but it is undesirable for sugar processing and creates lot of problems in sugar manufacturing. Currently, sugarcane varieties delivered to sugar mills for processing have too high polysaccharides including starch contents that make sugar processing more difficult and give sugar loss as well as financial loss to the factories. In present scenario when sugar recovery is very low in some part of India, it is very important to identify the areas where we can extract more sugar and give financial boost to the company. The present study was conducted to identify the impact of Alpha Amylase enzyme on starch content and its subsequent effect on different parameters in sugar processing stage. We are presenting here the study on Bacterial Alpha Amylase & its role on sugar processing, sugar losses and sugar quality.
