The importance of virgin olive oil in the so-called Mediterranean diet is often associated to the presence of phenolic compounds whose antioxidant activity may prevent pathologies due to the action of reactive oxygen species. A new approach to their identification and assay in virgin olive oil is here presented, which is based on the specificity of tandem mass spectrometry and on the reliability of the isotope dilution method. The method can be extended to any natural matrices, including mill wastes, after a simple step of sample preparation.
