This presentation shows a feasibility study on real time monitoring of head-space vapors from processed foods using a proof-of-concept sampling device combined with a Triple TOF~(TM) 5600 system. The goal is to find out the following: 1. Can volatile organic compounds (VOCs) from processed foods be detected? 2. What type of VOCs can be detected? 3. Can this approach differentiate VOCs from similar products? Several commercial chip products are analyzed and their TOF MS spectra were processed with Peak View~(TM) Software 1.1/FormulaFinder for elemental composition and MarkerView~(TM) Software 1.2.1 for principle component analysis (PCA).
