Food microstructure evaluation is a constantly growing field in food analysis: milk structure, in particular bovine milk, has been fully defined in terms of micellar casein and fat globule granulometry (1); these aspects have had implications in the control of the evolution of dairy products (2). In the sow, a characterisation of milk fat globules dimensional analysis is lacking: therefore, the aim of this work was to analyse the granulometry of milk fat globules in healthy lactating sows by the laser scatter technique.
