Assessment of flour quality from F5** breeding material is usually carried out using mixing quality data it would be seen as a distinct advantage when assessing this material if rheological quality such as that produced by the Brabender Extensograph were available. This paper discusses how using a modification to the Kieffer Rig that this data can be obtained.The Value Added Wheat Co-operative Research Centre has had a key roll in the Eastern States for the breeding and release of Soft Wheat varieties. The Texture Analyser and Kieffer Rig attachment was seen as an opportunity to carry out quality testing of VAWCRC lines generation earlier than usual resulting in significant potential cost savings. This paper describes the methodologies employed in carrying out the quality testing and a comparison with existing methods using statistical methods.
