The Lab-on-a-chip system for analysing protein composition involves microfluidic capillary electrophoresis, permitting the fractionation of a protein extract in less than one minute (Kuschel and Neumann 2002). As the equipment is small and portable, it can be used in places such as grain-receival sites, beyond the conventional laboratory (Uthayakumaran et al, 2005; Batey et al, 2007). It is thus suited for checking varietal identity at the time of grain receival and, in the applications reported here, for detecting grain defects that would otherwise go undetected at receival.
