The source of the C3 epimer (3-epi-25(OH)D_3) of 25-hydroxyvitamin D_3 (25(OH)D_3) in human serum may arise, in part, from exogenous intake [1]. While pork and beef contain 25(OH)D_3 [2,3], it is not known if pork and beef supply 3-epi-25(OH)D_3 to the human diet. Measurement of 3-epi-25(OH)D_3 in pork and beef and in the corresponding serum of domestic animals may provide clues to the epimer's origin.
