Where as the big difference in acidification process occurring between species, little is known about why E. oleifera and its hybrids take longer than E. guineensis to acidify. Although preliminary, for the first time analyses at protein level of mesocarp from different palm oil species were compared and analyzed over time after harvesting. This study shows the existence of a rich protein composition in palm oil mesocarp, and the existence of unique features by specie, besides a set of complex changes related to time after harvesting. The results corroborate phenotypic observations, since hybrids and E. guinenensis show several similar characteristics, for instance, plant height and resistance to diseases. The following steps will include a comparative proteomic study with identification and quantification of all proteins detected.
