Evidence shows that prolonged digestion and absorption of carbohydrates has beneficial effects on the glucose and lipid metabolisms, in diabetes and in hyperlipidemia as well as in healthy subjects . Whole grain foods and legumes which have carbohydrates that are slowly digested and absorbed were shown to protect against development of type II diabetes mellitus and to improve glycemic control . Slowly digestible carbohydrates were also reported to prolong the duration of satiety hence could have a preventive role in the genesis of obesity 'Slow glucose release' or 'lente carbohydrate' foods result in lower blood glucose responses and hence were described to have low glycemic indices . Starch, the major carbohydrate source in human nutrition, can have properties to result in an entire range of slow to rapid digestion.
