The solidification crystallization characteristics of water-in-oil emulsions produced in stagnant coolant here pure water was investigated. The emulsions were prepared at different energy inputs by using an ultra turrax mixer. This emulsion was then pumped through a single orifice with the help of a syringe pump at a constant velocity. The uniform drops from this water-in oil emulsion were formed at the orifice exit which was then solidified in the coolant at a temperature below the freezing point of oil. The higher was the energy input; the lower was the size of water droplets distributed in the emulsion. The smaller water droplets in the emulsion affect on the size of the drops from the orifice which then turned into solid particles. The interfacial tension between the emulsion and the coolant was also influenced by the size of the distributed droplets. So, a higher energy input, lowers the drop size from orifice and also lowers the interfacial tension.
