Barley, malt and hops quality are of fundamental importance to obtain good quality beer. Classical methods of analysis often require tedious, laborious and expensive processes. Matrix Assisted Laser Desorption Ionization Time Of Flight Mass Spectrometry (MALDI TOF MS) is a rather novel technique with excellent sensitivity able to detect various compounds up to quite high molecular weight proteins. MALDI TOF MS instrumentation enables highly sensitive and fast analysis and/or detection with a very low sample amount. This work deals with the examination of MALDI TOF MS possibilities for the detection and identification of various analytes in raw brewery materials and beer, e.g. detection of mycotoxins. Substances with molecular weights corresponding to mycotoxins and thionins have been detected. Detection limit of deoxynivalenol was estimated to be 8.5 x 10 –12 mol.
