The production of farmed cod has increased rapidly in the last few years, both due to an increased market demand of cod products as well as to a simultaneous decrease of available wild cod in the oceans. Recent studies have shown that farmed cod can not be used in the production of all kinds of fish products, in which wild cod is used today. To meet this growing demand it is therefore important to find the variances between the physical and chemical properties of farmed and wild cod and how these parameters can be affected by various processing methods, such as salting, cooling, drying etc.
