Microencapsulation protects the viability and survival of probiotic bacteria under in vitro simulated gastric conditions and in fermented products such as yoghurt, cheese, ice cream and salami. Green fluorescence labelled bacteria has been used to show that microencapsulated bacteria can be released in the gastrointestinal tract.
