The aim of this study was to evaluate the effect of dietary fructans and chromium biomimetic cation supplementation on carbohydrate metabolism indices in healthy rats. It was found that apparent CHO digestibility was higher in oligofructose supplemented diets and lower in high-fructan diets. Cr (Ⅲ) supplementation decreased serum insulin level. Rats fed high-fructan diets had markedly increased liver Cr content, while groups supplemented with Cr had higher liver and kidney Cr concentrations.
